Ceremonial Cacao
Cacao comes from the Cacao tree, tropical climate, jungles of Peru, Ecuador, Guatemala
It produces during the rainy season Dec-May
Origin is said to be the upper region of Amazon in Peru and Ecuador more than 5,000 years ago. Also evidence it was being used at the same time by the Mayans around what is now Guatemala and Mexico.
Ceremonial-grade cacao production involves several carefully managed steps:
Harvesting: Selecting ripe cacao pods from organically cultivated or native trees (such as the Chuncho variety).
Fermentation: A 6-7 day process in wooden boxes, involving regular turning to ensure uniform fermentation. This process is crucial for developing flavor and reducing acidity.
Drying: A 48-hour sun-drying process with careful management to allow proper evaporation of acetic acid and flavor development.
Processing: Beans are hand-peeled, with moldy ones discarded. The remaining beans are then lightly roasted at lower temperatures (100-115°C for about an hour) compared to commercial cacao.
Final product: The roasted nibs are melted at low temperatures and formed into blocks, preserving the natural fats and fibers of the cacao.
This meticulous process results in a high-quality, ceremonial-grade cacao that retains its natural properties and offers a more balanced, pleasant flavor profile compared to commercial cacao products.
